Rachael’s perfect weekend includes curling up on the couch (by herself) to enjoy a romantic movie and A LOT of sushi.. the raw kind! The hotter the wasabi the better! Apple chimichanga and ice cream for dessert!

A trip to Ireland is in Rachael’s future.  She has a lot of reasons… beautiful greenery, castles, culture, music, the pubs.  Traveling to Ireland would also be a nod to her grandma who used to call her on St. Patty's day and sing "Eyes of the Irish.”

Rachael shared a quote that has been hanging on her wall for the last 15 years. "Be bold enough to use your voice, brave enough to listen to your heart, and strong enough to live the life you've always imagined.”  Bold, Brave, and Strong.  That sounds like the Rachael we know.
